CRUST:
- 1 1/2 c graham cracker crumbs 150g, about 10 full sheet graham crackers
- 6 Tablespoons unsalted butter melted, 87g
- 1/3 c granulated sugar 67g
CHEESECAKE:
- 3 - 8 ounce packages cream cheese room temperature
- 1 1/2 c sugar
- 1/4 c sour cream
- 2 tsp vanilla extract
- 1/4 c flour
- 3 eggs room temperature
- red & blue gel food colors
- red white & blue sprinkles

CRUST:
- Grind graham crackers in food processor until fine.
- Mix the graham cracker crumbs, melted butter, granulated sugar, and sprinkles together with a rubber spatula in a medium bowl until combined. The mixture will be thick, coarse, and sandy.
- Press the mixture into the bottom of the a 9 - 10 inch springform pan. Make sure it is tight and compact.
- Bake for 10 minutes at 325°F. Remove and cool.
CHEESECAKE:
- Place a large baking sheet on the bottom rack of the oven. Fill it halfway with water. Let the oven preheat to 325°F again.
- Beat the cream cheese and sugar until creamy.
- Add the sour cream, vanilla, and flour and beat again.
- Add the eggs and beat until they are mixed in.
- Divide the batter evenly into 3 bowls. Use the food coloring to tint two of the bowls red and blue.
- Spoon the mixture evenly over the crust, alternating the colors.
- Drag a butter knife through the batter going up and down and back and forth until you get a good swirl pattern. Do not over mix.
- Place the pan on the oven rack above the pan of water.
- Bake for 45 minutes. Remove from the oven immediately and place on a wire rack. Let the cheesecake cool on the counter for 1 hour, then refrigerate for 4-6 hours.
